5 appetizers with smoked salmon
#1 Salmon rillettes
Rillettes are the creamy pâtés (usually from pork or liver) that are prepared when the meat is slowly cooked in its own fat. However, you can also make delicious rillettes with smoked salmon, which you will serve either as a dip for croutons or on toasted bread. The recipe is a suggestion from Martha Stewart .
Materials
- 2 tbsp extra virgin olive oil
- 1 onion, chopped
- 1 ½ cups smoked salmon
- ¼ cup fresh dill, chopped
- ¼ cup mayonnaise
- 1 tbsp Dijon mustard
- 2 tbsp fresh lemon juice
- ½ tbsp. lemon zest
- thin toasted slices of bread or croutons to serve
Implementation
Heat the olive oil in a pan, add the onions and saute until they become transparent, for about 10 minutes. You let them cool for a few minutes and then transfer to the food processor, to which you add the salmon, dill, mustard, juice and lemon zest. You mix until everything becomes a single mixture (not too much) and transfer to a deep bowl. You can garnish with a little more dill.
#2 Salmon rolls
A very easy recipe that wins impressions both as an image and as a taste, which can even be called ” sushi ” that will delight the little guests.
Materials
- 2 large tortillas
- 3 tbsp cream cheese, at room temperature
- ½ tbsp. lemon zest
- 1 tbsp lemon juice
- salt and pepper
- 1 tbsp spring onion (green part only)
- 4 thin slices of smoked salmon
Implementation
Spread the tortillas out on a large, clean surface. In a bowl, mix cream cheese, lemon juice and zest and add salt and pepper. Spread this mixture evenly on each tortilla and then cut it in half.
Put the spring onion on each of the 4 pieces of tortilla and spread the salmon slices, leaving a 1 cm margin on the edges of each tortilla.
Starting from the circular side, tightly roll each tortilla piece all the way to the end to make a large roll. Then cut it vertically into smaller rolls, so it resembles sushi.
#3 Toasted bread with smoked salmon, avocado and poached egg
There’s no better way to impress at brunch than with this special dish. For a better result, you can use quail eggs.
Ingredients (for 1 slice)

- 4 small eggs (ideally quail) or 1 large
- 1 large slice of whole meal bread, toasted and buttered
- 2 thin slices of smoked salmon
- ¼ small ripe avocado, peeled and thinly sliced
- a few drops of lemon for serving
