Cake is a sweet preparation that we enjoy with morning coffee or afternoon tea, while those who have children are very likely to give it to them as a snack at school . Although we think of it as a very sweet – and possibly unhealthy – pastry, we can make cakes in their healthy version (using e.g. whole meal flour and bananas ), steam them to preserve their nutritional value, or using seasonal fruits such as lemons or oranges.

Fruit cake recipe
Materials
- 360 gr. dates
- 300 gr. coconut oil
- 240 gr. almonds, ground
- 120 ml honey or maple syrup
- ¼ tsp salt
- ¾ kg. nutmeg
- 2 tbsp cinnamon
- 1 tbsp ginger
- ¼ tsp vanilla extract
- zest of 1 orange
- zest of 1 lemon
- 30 gr. coconut
- 125 gr. walnuts or pecans
- 115 gr. hazel
- 150 gr. dried grapes
- 150 gr. dried cranberries
- 145 gr. dried apricots
- 150 gr. dried figs
Implementation
Beat the dates, coconut oil, almonds and honey in a blender for a while. After they are homogenized, add the spices and vanilla extract. Then, beat the mixture again for a while and then add the zest from the orange and lemon.
Then, add the nuts and dried fruits. After all the ingredients are homogenized, we place them in a cake form. Our dessert is ready to be served!
